Heritage Tomato, Mozzarella, Kalamata Olive & Thyme Tart
A sheet of ready-made puff pastry becomes the perfect crisp, buttery base for sweet heritage tomatoes, creamy mozzarella, salty Kalamata olives and thinly sliced red onion. Add plenty of fresh thyme, a drizzle of good olive oil and a little seasoning, and you have one of those wonderfully simple tarts that looks far more impressive than the effort involved would suggest.
The Last of The Summer Tomatoes, North Devon Cheddar and Yesterday’s Croissants
Serve warm, while the cheddar is still gloriously gooey and the tomatoes are soft and sweet. Perfect for a snoozy morning, lazy lunch, a quick supper or one of those occasions when you open the fridge, find a few odds and ends, and accidentally make something rather wonderful.
The Start To The Day, Granola
Granola is one of those things that makes an ordinary morning feel like you’ve got your life together.
There’s something wonderfully comforting about the smell of oats, cinnamon and honey gently toasting in the oven. It’s warm, nutty and just sweet enough, and somehow makes getting out of bed feel like a much better idea. A bowl of yoghurt and granola for breakfast? Perfect. A handful straight from the jar while you’re making coffee? Also perfectly acceptable.
